Chef Tina Calhoon
A love of food and flavor has driven Chef Tina in her 30+ years in the food and service industry. Born in Jacksonville, Florida and raised in Ocala, Chef Tina learned the basics from her Mom at an early age. With “hands on” culinary training, Tina has developed a unique ability to create inventive dishes that appeal to all palates. With her open appreciation of cultures, Chef Tina is always interested in learning regional and ethnic cooking techniques and dishes in order to recreate them for today’s food savvy clients.
Chef Tina began her restaurant career at the age of 16 at Bennigan’s in Ocala, Florida. After getting married and moving to Little Rock, Arkansas, Chef Tina opened her first restaurant at age 21. By her mid-twenties she owned and operated three restaurants in the Downtown Little Rock area. After a divorce, Chef Tina sold the restaurants and moved back home to Florida with her two young daughters. As a single mother, Tina went to work in corporate restaurant management.
Catering her own wedding, with husband Tim, rekindled her love of food and guest service. Tina along with her husband opened Frescos in 2009. In a struggling economy everyone thought they were crazy. Frescos was intended to be a small breakfast and lunch venue, with catering on the side. It has now, six years later, grown into a Downtown Lakeland destination. Lakeland’s only innovative restaurant and craft bar where locals feel like they are in the big city yet only be a few blocks from home. Additionally, Frescos has become well known for their full catering division, handling events from intimate dinner parties to elaborate receptions to large fundraising galas. As a working owner, you can always find Chef Tina at Frescos, in one of the two kitchens doing what she does best, cooking.
